Fish head curry

A delicacy in Asia, the fish head curry is a spicy dish that cooks the fish head with south india curry. Different ethnic groups have their own unique way of cooking the curry, some would add coconut milk for a creamier texture while others would add tamarind paste for slight sourness. But the common thing across all these curries is the use of red snapper, accompanied with different types of vegetable like eggplant and lady finger.
